  • 1 T. olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 large zucchini, halved lengthwise, thinly sliced
  • 1 C. button mushrooms, sliced
  • 1 C. penne pasta, cooked al dente according to package instructions
  • 1 (24 oz.) large jar pasta sauce
  • 1 (15 oz.) container low-fat ricotta cheese
  • sea salt
  • freshly ground black pepper
  • 1/4 - 1/2 C. grated mozzarella cheese

Preheat your oven to 350 degrees F. Take out a 9x13-inch baking dish and coat it with cooking spray. Use a large skillet to heat oil over medium heat. Add the onion and cook it for four minutes, which is about how long it should take to soften. Add the zucchini and mushrooms and cook for seven additional minutes, or until softened. Remove the vegetables from the heat when finished. Add the penne pasta, pasta sauce, ricotta cheese, salt, and pepper into the skillet with the vegetables. Stir in order to evenly combine all of the ingredients. Transfer the pasta into the prepared baking dish once the ingredients are all thoroughly mixed together. Top with mozzarella cheese and bake in your preheated oven for 30 minutes. Serve.
