  • 5 cups fresh raspberries
  • 1 cup water
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 1-2 tablespoons fresh lemon juice

Process water and raspberries until mixture is smooth. Strain pureed raspberries with a fine mesh strainer over a large bowl about 1/4 at a time. Press with the back of a spatula through strainer to remove seeds. Add sugar, vanilla, and lemon juice to raspberry mixture in bowl and whisk until sugar is fully dissolved. Freeze mixture according to the instructions on your ice cream maker. Serve immediately as soft serve or freeze for 1-2 hours and serve for a firmer sorbet.
