Delectable Tomato and Bacon Breakfast Casserole
Serving Size / Yield
- 2 Eggs
- 2 Large Tomatoes, sliced
- 8 oz Sour Cream
- 2 Tbsp Flour
- 1½ cups Shredded Cheddar Cheese
- 6 slices Cooked Bacon, crumbled
- 2 potatoes, sliced thinly
Mix sour cream and flour into the egg mixture and continue beating until all ingredients are combined
Place tomatoes into a shallow baking dish
Pour half of the cheese and bacon on top of tomatoes.
Pour half of the egg mix on top of the cheese and bacon
Repeat layering once more.
Arrange potatoes on the rim of the dish
Bake for 25 minutes at 350 degrees
