  • 3 1/2 C. cauliflower
  • 1/2 C. low-fat milk
  • 2 eggs
  • 2 slices white bread, diced
  • 1/2 - 1 C. heavy cream
  • 1/2 C. grated Emmental cheese
  • 1 pinch nutmeg
  • unsalted butter
  • sea salt
  • freshly ground black pepper

Preheat your oven to 400 degrees F. Take out a baking dish and grease it using the butter. Blanch the cauliflower inside salt water for around two minutes. Drain when finished and place the cauliflower inside of the prepared baking dish. Take out a bowl and mix together the cream, milk, cheese, and eggs. Season with salt, pepper, and nutmeg. Add this mixture on top of the cauliflower. Top with bread pieces and bake for 30 minutes, which is how long it should take for the cauliflower to turn golden brown.
