Delicious Baked Turkey Taco Casserole

- 1 lb. lean ground turkey
- 1 (16 oz.) can refried beans
- 2 (4-oz.) cans diced green chilies, divided
- 1 C. diced tomatoes, drained
- 1 T. chili powder
- 2 tsp. ground cumin
- 1 1/4 tsp. sea salt
- 1/4 tsp. crushed red pepper flakes
- 2 flour tortillas, sliced into 1-inch strips
- 1/2 C. salsa of your choice, plus more
- 1 1/2 C. shredded Monterey Jack cheese
Use nonstick cooking spray to spray an eight-inch square casserole dish and set aside when finished. Preheat your oven to 375 degrees F. Spray a large skillet with the same cooking spray and then set it over medium-high heat. When the pan is heated, place the ground turkey inside and cook for around five minutes, or until the turkey is browned and remember to use a rubber spatula to break up the meat. Add the chili powder, cumin, salt, and red pepper flakes into the pan and thoroughly combine. Add one can of the green chilies and tomatoes into the pan and cook and thoroughly mix together for about five minutes, or until the turkey is finished cooking. Remove from heat.
Use the ground turkey to create a thin layer in the bottom of your prepared casserole dish. Begin the layering process by adding the ingredients in this order: refried beans, green chilies, cheese, and four tortilla strips. Repeat the layering process three times. Evenly spread the salsa over the last four tortilla strips. Bake the casserole in your preheated oven for about 30 minutes, or until the cheese is melted and bubbling. Let the casserole sit for 20 minutes and then serve.
