  • 3 lbs Beef Stew Meat
  • ¾ tsp Salt
  • ¼ tsp Pepper
  • 2 Tbsp Oil
  • 3 Tbsp Flour
  • 1½ cups Beef Broth
  • ¾ lb Large Mushrooms, cut in half
  • 1 Onion, chopped
  • 3 Medium Carrots, sliced
  • 2 Tbsp Tomato Paste
  • 1 cup parsley,chopped

Season beef with salt and pepper. In large non-stick skillet, heat oil and brown beef in batches. As the beef is browned, transfer to 5-quart crock pot. Add flour to browned beef and toss to coat. Add broth.
To the same skillet used to brown the beef, add the mushrooms, onion, carrots; cook over medium heat until carrots are tender, 7 minutes.
Stir to loosen the browned bits on the bottom. Stir in the tomato paste. Transfer to crockpot. Cover and cook on low 8 hours.
Garnish finished meal with chopped parsley.
