  • 2 C. dark Beer
  • 1 large onion, halved
  • 1 lb. boneless steaks, cubed
  • 4 oz. thick-cut bacon, diced
  • 2 tsp. Dark brown sugar
  • 2 carrots, chopped
  • 1 C. fresh green beans, sliced
  • 3 bay leaves
  • All-spice to taste
  • 1 Tbs. Dijon mustard
  • 1 Tbs. fresh thyme, chopped
  • Salt and pepper to taste

In a large Dutch oven, cook the bacon until for a few minutes before adding in the sugar and onion. Stir the mixture frequently until the onion browns - about 15 minutes. Add in the beer, scraping up the bits from the pan. Add in the all-spice, bay leaves, salt. Pepper, mustard, and thyme. Stir in the beef, carrots and green beans. Bring the mixture to a simmer and and cover the pot. Place the dish in a 300 degree oven and let it cook for 1 ½ hours.
