Ingredients
- 3 garlic cloves, minced
- 2 flat anchovy fillets, chopped
- 3 Tbs. red wine vinegar
- 3 Tbs. extra-virgin olive oil
- 1/2 tsp. freshly ground pepper
- 1/8 tsp. salt
- 1 15-oz. can sliced beets, drained
- 2 Tbs. chopped fresh parsley
Directions
In a medium bowl, combine garlic, anchovies, vinegar, olive oil, pepper and salt. Beat with a fork to blend. Add beets and toss. Add salt if necessary. Garnish with chopped parsley.
