You will be more than impressed with this copycat Cafe Rio chicken taco recipe. All you need is a crockpot to prepare the chicken just like the well-known restaurant. When the chicken is done you can add mozzarella cheese, jalapeno peppers, and tomatoes.

  • 2.5 lbs. boneless skinless chicken breast halves
  • 3/4 C. reduced-sodium chicken broth
  • 1/2 C. Italian salad dressing
  • 1 T. fresh lime juice
  • 1 T. chili powder
  • 2 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. sea salt
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. cayenne pepper
  • 6-8 flour tortillas
  • 2-4 tsp. shredded mozzarella cheese
  • 1-2 tomatoes, sliced
  • 2-3 jalapeno peppers, thinly sliced

Take out your crockpot and put the chicken breast halves inside of it. Take out a bowl and whisk together the chicken broth, salad dressing, lime juice, chili powder, onion powder, garlic powder, paprika, cumin, salt, pepper, and cayenne pepper. Pour this broth mixture over the chicken. Cover and cook on low for around six hours. When it is finished cooking, shred the chicken and cook on low for an additional 30 minutes. Drain the chicken. Put the chicken inside the tortillas and add the cheese, tomatoes, and peppers to each taco. Serve.
