  • 1 C. hot water, divided
  • 2 ½ C. bread flour
  • 1 packet active dry yeast
  • 1 ½ T. olive oil
  • 1 tsp. salt
  • ½ T. sugar
  • 1 ½ C. pizza sauce
  • 1 T. oregano
  • 3 oz. pepperoni, sliced
  • 1 ½ C. mozzarella cheese, shredded
  • ¼ C. Parmesan cheese, grated

In a large bowl, combine ¾ cup of water with bread flour and mix to combine. Cover and set aside for 15 minutes. In a separate bowl, combine remaining water with yeast and set aside until bubbly and dissolved. To the flour mixture, add in oil, salt, sugar, and yeast mixture; mix with a dough hook or by hand until smooth. Cover and refrigerate overnight. Set out to reach room temperature and preheat oven to 450 degrees. Roll out dough and press along the bottom and sides of a greased baking pan. Sprinkle ½ cup of mozzarella at the bottom, pour on pizza sauce, and layer with pepperoni, oregano, remaining mozzarella, and Parmesan. Bake for 25 minutes until crust is golden.
