  • 2 lb. salmon fillet, cut into six pieces
  • 1 cup bread crumbs
  • 1 Tbs. butter
  • 1/4 cup mayonnaise
  • 3 tablespoons parsley, minced
  • 2 tablespoons fresh tarragon, minced
  • 1 tablespoon fresh dill, minced

Heat oven to 400°. In a frying pan, sear the salmon, flesh side down, in 1 tablespoon of butter.

In a food processor, pulse the bread crumbs and herbs with just enough mayonnaise to make a wet sand consistency.

Lay salmon skin side down on a baking sheet, top with herb mixture and bake 10-12 minutes or until flaky. If a crispier top is desired, broil for 2-3 minutes. Serve hot.
