  • 5 eggs
  • 1/2 C. heavy cream
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1 cup onion, chopped
  • 2 garlic cloves, minced
  • 1 T. butter
  • 1/4 C. grated Parmesan cheese
  • 2 C. broccoli florets
  • 1 C. cherry tomatoes
  • 1 pre-made pie crust

Spray a pie pan with cooking spray and preheat your oven to 400 degrees. Heat the butter in a skillet over medium heat. Once melted, add the onions and cook until translucent. Add the garlic and sauté for another minute.

Beat the eggs lightly in a small bowl and mix in the heavy cream and seasoning. Unroll the pie crust and place it into the pan. Layer the onion mixture, and top with eggs. Add the broccoli florets and cherry tomatoes on top, then sprinkle with Parmesan cheese. Bake the quiche for 25 minutes.
