  • 4 large zucchini, sliced ¼ in. thick
  • 1 lb. ground turkey
  • ¾ C. reduced fat mozzarella, shredded
  • 15 oz. skim ricotta
  • ¼ C. Parmesan cheese
  • 1 egg white
  • ¼ C. basil, freshly chopped
  • ¼ C. parsley, freshly chopped
  • 2 tsp. dried oregano
  • 1 (14 oz.) can tomato sauce
  • 1 (14 0z.) can crushed tomatoes
  • 3 cloves of garlic, minced
  • 1 yellow onion, diced
  • 1 green pepper, diced
  • 1 Tbs. olive oil

Preheat the oven to 375 degrees. Line a baking sheet with the zucchini strips and brush with olive oil; sprinkle salt and pepper over them and roast in the oven for 20 minutes. Heat a skillet on medium-high and add the onions and garlic, saute them until they’re tender - about 5 minutes. Add in the ground turkey and cook until it’s gray. Stir in the cans of tomatoes, the oregano, basil, and parsley. Bring this to a boil and reduce the heat to a simmer for 25 minutes until it thickens. In a separate bowl, combine the egg white, ricotta, and parmesan.add in ½ cup of the meat sauce. Assemble the lasagna in baking dish. Spread in some meat sauce, then the zucchini noodles. Add more meat sauce, ricotta mixture, and mozzarella. Continue this until finished. Cover with foil and bake i for 30 minutes. Remove foil and bake for an additional 15 minutes.
