  • Cookie Dough:
  • 1/4 C. butter, softened
  • 1/2 C. sugar
  • 1 egg
  • 1/4 C. almond milk
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1 3/4 C. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. lemon zest
  • Pudding:
  • 3.4 oz. box vanilla instant pudding
  • 2 C. milk
  • 1 Tbs. lemon juice
  • Whipped Cream:
  • 1/2 C. heavy whipping cream

Preheat the oven to 350 degrees. In a bow, cream together the butter and sugar until well combined. Add in the lemon zest, lemon juice, milk, egg, vanilla, and almond. Stir until well combined.

In another bowl, mix together 1 C. flour, baking powder, and salt. Mix the dry ingredients into the wet ones. Gradually add in 1/2-3/4 C. more flour until the dough isn't sticky anymore. Lightly grease 8 mini tart tins and press the dough into them. Put the parchment paper on top of the dough and add baking beans to weight them down. Bake for 8 to 10 minutes.

Follow the box instructions, or whisk the pudding into 2 C. milk and whisk well for 5 minutes. Add in the lemon juice and whisk again. Pour the heavy cream into a bowl and whip the cream for 5 to 8 minutes, or until soft peaks form. Gently fold the cream into the pudding mix.

When the cookies have cooled, pull them out of the tart pans and spoon the pudding mixture into the tarts.
