  • 1½ C. flour
  • 2 eggs
  • 1 T. salt
  • Ricotta
  • 3 C. tomato sauce
  • 2½ C. mozzarella, grated
  • 2 C. parmesan cheese, grated
  • 1 lbs. ground meat, cooked
  • 2 C. basil
  • 8 medium sized ramekins

In a bowl, add the flour and eggs. Once the dough becomes smooth and elastic. Divide the dough into three balls and working with one ball at a time flatten each of them. Fold in thirds, then roll again. Bring a pot of water to a boil, and add the salt. Drop pasta sheets in the boiling water for 30 seconds. Then put the dough in a greased ramekin and using your fingers begin to shape the dough ramekin. Set aside for about 7 minutes. Now you can assemble the lasagna. Begin by spreading the tomato sauce on the bottom of the ramekin and top it with ricotta cheese. Add a layer of pasta noodles. Over the noodles spread more tomato sauce and ricotta cheese. Add a layer of the cooked ground meat and top it with cheese. Add another layer of noodles, repeating the layers as instructed above ending with a cheese layer. Once the ramekin is packed garnish with fresh basil, cover with foil and bake in a 350 degree F oven for about 30 minutes.
