It’s always helpful to know how to make a good risotto. This classic Italian dish is great on its own or a perfect side dish for almost anything!

Ingredients

  • 5 C. chicken stock
  • 1 ½ C. Arborio rice
  • ½ C. fresh Parmesan, grated
  • 8 oz. sliced mushrooms
  • 1 small yellow onion,diced
  • 1 ½ Tbs. olive oil
  • 1 Tbs. butter
  • 1 Tbs. parsley, chopped
  • Salt and pepper to taste

Simmer the chicken stock. In a small skillet, saute the mushrooms for about 10 minutes or until tender. In a separate pan, heat the olive oil and add the onion. Cook until translucent. And rice and cook for an additional minute. Pour in ½ cup of the stock and stir until fully absorbed. Add in another 1 ½ cup of the stock until absorbed. Continue adding 1 cup of the stock at a time making sure it’s fully absorbed before adding the next (keep a ⅓ cup of the stock for later). Once the risotto has absorbed all the liquid, remove it from the stove. Add in the butter, remaining stock, salt, pepper, cheese, and mushrooms.
