  • Cake:
  • 4 C. cake flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 C. butter, softened
  • 1 ½ tsp. baking soda
  • 2 C. sugar
  • 1 T. vanilla extract
  • 4 large eggs
  • 2 C. buttermilk
  • ¼ tsp. peppermint extract
  • ½ C. white chocolate chunks
  • Frosting:
  • 2 C. butter, room temperature
  • 5 C. powdered sugar
  • 3 T. vanilla extract
  • ¼ C. white chocolate, melted
  • Garnish:
  • Peppermint meringue kisses

Preheat the oven to 350 degrees. Line 2 cake pans with parchment paper and grease them. In a bowl, mix together the cake flour, baking powder, baking soda and salt. In an electric mixer, beat the butter and sugar until it is fluffy. Add in the eggs, vanilla and peppermint extract. Add in the 1/3 of four and mix. Pour in half of the buttermilk and ½ of the remaining flour. Fold in the white chocolate and make sure it's mixed well. Divide the batter into the 2 cake pans and let them bake for 25 minutes. Let is cool. Mix together all of the frosting ingredients in an eclectic mixer. Place one of the cakes on a cake platter, and cover the top with the frosting. Place the other cake on top and spread the reaming frosting over the whole cake. Top it with the peppermint meringue kisses.
