  • 12 oz. salmon
  • ½ lb. white potatoes, peeled and diced
  • 4 green onions, sliced
  • 1 bunch fresh dill, chopped
  • 1 egg, beaten
  • 3 Tbs. oil
  • 3 Tbs. butter
  • Salt and pepper

Boil the potatoes until they’re tender. While they’re boiling, half the salmon into two pieces. Sprinkle them with salt and pepper. Heat a large skillet and pour some of the oil in it. Sear the salmon on both sides until cooked through (make sure it’s just cooked through). Shred the salmon and drain the potatoes. Mash the potatoes and combine all of the ingredients. Form patties and cook them in a skillet. Butter the skillet and make sure to cook the patties for at least 4 minutes on each side until they’re golden.
