  • Chicken
  • 4 lb. whole chicken, pitted
  • 4 Tbs. butter, separated
  • 4 sprigs fresh rosemary
  • Salt and pepper to taste
  • Plum Sauce
  • 1 ½ lb. plums, pitted
  • ⅓ C. red wine
  • ⅓ C. brown sugar
  • 2 Tbs. soy sauce
  • 1 Tbs. freshly grated ginger
  • 2 tsp. garlic, minced
  • ½ tsp. red pepper flakes

Preheat the oven to 450 degrees. Rinse and clean the chicken. Dry the meat with a paper towel and rub it with salt and pepper. Place the chicken in a large pan and stuff the cavity with the butter and rosemary. Tie the chicken together with cooking string. Bake the chicken for 20 minutes at that heat before reducing it to 350 degrees for the remaining 45 minutes.

While the chicken is roasting, start on the plum sauce. Bring all of the plum sauce ingredients to a boil and reduce to a simmer. Cook this on low for 25 minutes. Once the sauce is done, pour about half of it on the chicken and place it back in the oven. Once the chicken is done, pour the remaining plum sauce.
