As far as stews go, this one is by far the easiest and tastiest to whip up. With all the classic beef stew flavors and none of the heavy beef, this dish is perfect for a light weekend dinner. Add mashed potatoes to the side if you’re going for an even more comforting dish; the broth acts as a delicious gravy!

  • 1.5 lb. turkey breasts, cubed
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 1 medium yellow, minced
  • 3 C. chicken stock
  • 1 bunch parsley, chopped
  • 1 C. frozen peas
  • 1 Tbs. olive oil
  • Salt and pepper to taste
  • 4 C. mashed potatoes, cooked

Heat a large saucepan on medium-high and add in the oil, carrots, celery, and onion. Pour in the chicken stock and parsley. Bring the broth to a boil and lower it to a simmer. Add in the turkey breasts and peas and continue to simmer for 25 minutes. Serve the stew with a side of mashed potatoes.
