  • 1 ½ C. frozen chopped spinach, thawed
  • 1 C. shredded cheese
  • ½ C. tomatoes, diced
  • 4 green onions, chopped
  • 1 stalk of celery, chopped
  • 1 tsp. ground cumin
  • ½ tsp. chili powder
  • ½ tsp. black pepper
  • 10 egg roll wrappers
  • 1 tsp. olive oil
  • 2 C. marinara or salsa

Preheat oven to 425 degrees. In a large bowl, mix spinach, cheese, tomatoes, onions, celery, cumin, chili powder and black pepper until well combined. Lay out egg roll wrappers on a greased baking sheet. Place ¼ C. mixture in each egg roll wrapper. Roll towards the center, folding the corners in as you go. Moisten with water.

Place seam side down. Brush egg rolls lightly with olive oil. Bake for 10-15 minutes or until golden brown. Serve with salsa or marinara sauce.
