  • 4 lb. whole chicken, cleaned out
  • 3 long ears of corn, halved
  • ¾ C. chicken stock
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1 tsp. sea salt
  • 1 tsp. fresh pepper

Directions

Season the chicken and corn with the spices and place it in a large pan. Pour the stock in with the fresh thyme and rosemary. Roast in the oven for 1 ½ hours at 375 degrees.
