Delicious Zucchini Bread

This bread has a wonderful taste and melts in your mouth! Everyone always wants me to make it for them.

Ingredients

  • 2 C. zucchini (do not peel)
  • 1 whole orange (do not peel)
  • 4 tsp. vanilla
  • 4 tsp. cinnamon
  • 1 tsp. baking soda
  • 3 eggs, beaten until fuffy
  • 3 C. four
  • 1 C. oil
  • 1/2 tsp. baking powder
  • 2 C. sugar
  • 1/2 C. chopped nuts

Directions

Put orange and zucchini though the chopper or food processor. Combine eggs, oil, sugar, vanilla and cinnamon and beat. Add baking soda, flour, and baking powder and mix well. Add chopped nuts. Bake in 2 loaf pans at 350 degrees for 1 hour.

  • Loved this recipe. The taste, texture and aroma was sensational. I made it with half sugar and half splenda....awesome. Next time I will try one loaf with a little orange glaze over the top, yum

  • I haven't tried this yet but WOW does it sound fabulous. We just bought a couple of zucchinis at the market yesterday and I am definately going to make this.
