Delightful Cranberry Bread Recipe

Ingredients
- 2 C. flour
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 C. sugar
- 1 egg, beaten
- 2 Tbs. butter, melted
- 1/2 C. plus 1 1/2 Tbs. orange juice
- 2 Tbs. hot water
- 1/2 C. nuts, chopped
- 1 C. fresh cranberries
- rind of 1 orange, grated
Directions
Preheat oven to 350 degrees. Blend together flour, salt, baking powder, baking soda, and sugar. In a separate bowl, combine egg, butter, orange juice, and water. Stir liquid ingredients into dry ingredients only until evenly moistened. Stir in cranberries, nuts, and orange rind. Turn dough into greased and floured loaf pan. Bake 60-70 minutes until toothpick inserted in center comes out clean. Let loaf sin int pan for 10 minutes before loosening sides and removing it from pan to cooling rack. Freezes well.
