Delightful Layered Mexicali Dip Recipe

  • 2 16 oz. cans refried beans
  • 1 8 oz. package cream cheese, softened
  • 1 tsp. ground cumin
  • 1 16-oz. package frozen corn
  • 2 cloves garlic, minced
  • 1/2 C. fresh cilantro
  • 2 fresh tomatoes, chopped
  • 1 sweet onion, chopped
  • 1 jalapeño pepper, seeded and chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 C. Monterey Jack cheese, shredded

Combine refried beans, cream cheese and cumin and mix well. Spread on the bottom of a greased 8 x 8-inch baking dish. Meanwhile sauté corn and garlic in a saucepan for just a couple of minutes and then remove from heat. Combine cilantro, tomatoes, onion, pepper, lime juice and salt and pepper and mix well. Place corn and garlic mixture in with tomato mixture and mix well. Spread over bean mixture and sprinkle with cheese. Bake at 350 degrees for about 20 - 30 minutes. Serve with tortilla chips.
