  • 1 lb. yellow potatoes, diced
  • ½ C. mushrooms, quartered
  • 3 Tbs. olive oil
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. cayenne pepper
  • 4 strips of bacon
  • 2 C. arugula
  • 1 small red onion, sliced
  • 2 Tbs. blue cheese
  • 4 Tbs. vinaigrette dressing

Preheat oven to 450 degrees. Toss diced potatoes and mushrooms with olive oil, salt, black pepper and cayenne pepper until evenly coated. Place in a roasting pan or on baking sheet lined with foil. Bake for 20-22 minutes, flipping or tossing occasionally. Remove from oven and allow 10-15 minutes to cool.

In a skillet, heat bacon over medium-low heat. Cook for 8-10 minutes, flipping occasionally. Once crispy, drain and remove from heat.

Toss arugula, onion and blue cheese in a bowl. Add potatoes, mushrooms and vinaigrette dressing. Gently toss until well combined. Serve.
