Delightful Tomato Basil Muffin Frittatas

- 6 large basil leaves, diced
- 1/2 C. tomatoes, seeded and chopped
- 3 Tbs. Parmesan, grated
- 12 eggs, beaten and seasoned with salt and pepper
- 2 dozen eggs, beaten and seasoned with salt and pepper
Preheat oven to 350 degrees F. Spray a 12 cup muffin pan with non stick spray. Divide basil, tomatoes and Parmesan equally between 12 cups. Pour the beaten eggs equally among the cups. Stir each cup well. Bake for 15 to 20 minutes. Let cool 5 minutes then remove and serve.
