Delightful White Chili Recipe

A spicy, delicious and healthy alternative to traditional chili. Our family loves this chili. The recipe came from someone at my YMCA but I made some changes to it. To lessen the time to prep, you could use frozen onions and green peppers. Just let them thaw first. Hope you like it.

  • 3 C. diced chicken breasts, skinless and boneless
  • 7-7 1/2 C. chicken broth
  • 1 medium onion, chopped
  • 3 ribs celery chopped
  • 1 medium green pepper, chopped
  • 1 10 oz. can diced tomatoes and chilies
  • 1 4.5 oz. can chopped green chilies
  • 3 15 oz. cans cooked Great Northern Beans
  • 2 tsp. ground cumin
  • 2 tsp. dried oregano
  • 1/8 tsp. ground cloves
  • 1-2 tsp. cayenne pepper

Saute chicken, onion, celery, green peppers and spices until chicken is cooked, about 10 minutes. Place chicken mixture into a large pot. Add tomatoes and chili, chopped chilies, beans and broth. Simmer 45 minutes. Serve with a dollop of low fat sour cream and a sprinkle of Cheddar cheese or Monterey Jack cheese.
