  • 3 C. carrots, grated
  • 2 C. sugar
  • 4 eggs
  • ½ C. unsweetened cocoa powder
  • 1 ¼ C. vegetable oil
  • 2 C. flour
  • 1 tsp. baking soda
  • Dash salt
  • Cream cheese frosting

Preheat oven to 350 degrees. In a large bowl, use an electric mixer to beat together carrots, sugar, eggs, and oil. Add in flour, cocoa, baking soda, and salt; mix until well blended. Pour batter into baking pans line with parchment paper and with greased sides. (It is up to you how many layers of cake you want yours to be!) Bake for 30 minutes until an inserted knife comes out clean. Let cool completely, frost, and serve.
