  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • Dash salt
  • 1 T. orange zest
  • 1 ½ C. cranberries
  • ½ stick butter, softened
  • 1 C. sugar
  • 1 egg
  • ¾ C. orange juice

Preheat oven to 350 degrees. In a large bowl, cream together butter and sugar until smooth. Mix in egg and orange juice until combined. In a separate bowl, combine flour, baking powder, baking soda, and salt; gradually mix this into your batter. Stir in orange zest and cranberries gently. Pour into a greased loaf pan and bake for 1 hour until golden. Remove from pan and let cool on a cooling rack completely before serving or wrapping to store.
