Denver Eggs Frittata

Ingredients
- 2 Tbs. vegetable oil
- 4 frozen soy breakfast sausage links, thawed and cut into 1/4-inch pieces
- 1/2 med. green bell pepper, cut into bit-size strips
- 1/2 med. red bell pepper, cut into bite-size strips
- 1 med. onion, sliced
- 8 eggs
- 1/2 tsp. salt
- 1/2 C. shredded Cheddar cheese
Directions
In 12-inch skillet, heat oil over medium-high heat. Add sausage pieces, bell peppers and onion; cook about 5 minutes, stirring occasionally, until tender. Spread vegetables evenly in skillet. In medium bowl, beat eggs and salt with wire whisk. Pour eggs over vegetables. Reduce heat to medium-low; cover and cook 9 to 11 minutes or until eggs are set. Remove from heat. Sprinkle with cheese. Cover; let stand about 2 minutes or until cheese is melted. Cut into wedges to serve.
