This tasty diabetic-friendly pizza is full of fruits and vegetables and so easy to make! My family loves this mango pizza. It makes a great party snack or dinner appetizer.

Ingredients

  • 1 C. chopped red bell peppers
  • 1/2 C. onion, minced
  • 1/2 C. mango, seeded, peeled and chopped
  • 1/2 C. pineapple tidbits
  • 1 Tbs. lime juice
  • 1/2 C. fresh cilantro, chopped
  • 1 12-inch prepared pizza crust

Preheat oven to 425 degrees. Lightly coat your 12" round baking pan with cooking spray.


For mango salsa: chop red pepper and mango and mince onion. For the pineapple, you can use canned pineapple tidbits or dice a few rings of fresh pineapple. Add all chopped ingredients to a small bowl. Add lime juice and fresh chopped cilantro. Mix thoroughly and set aside. 


Press prepared pizza crust dough into baking pan. Bake ~15 minutes.


Remove pizza crust from oven and evenly spread with mango. Bake pizza crust 5 to 10 more minutes, until crust is golden brown and toppings are hot. 


Take pizza out of oven and slice into 8 pieces with pizza cutting tool. Serve immediately.
