Diabetic-Friendly Magnificent Mango Salsa Pizza

- 1 C. chopped red bell peppers
- 1/2 C. onion, minced
- 1/2 C. mango, seeded, peeled and chopped
- 1/2 C. pineapple tidbits
- 1 Tbs. lime juice
- 1/2 C. fresh cilantro, chopped
- 1 12-inch prepared pizza crust
Preheat oven to 425 degrees. Lightly coat your 12" round baking pan with cooking spray.
For mango salsa: chop red pepper and mango and mince onion. For the pineapple, you can use canned pineapple tidbits or dice a few rings of fresh pineapple. Add all chopped ingredients to a small bowl. Add lime juice and fresh chopped cilantro. Mix thoroughly and set aside.
Press prepared pizza crust dough into baking pan. Bake ~15 minutes.
Remove pizza crust from oven and evenly spread with mango. Bake pizza crust 5 to 10 more minutes, until crust is golden brown and toppings are hot.
Take pizza out of oven and slice into 8 pieces with pizza cutting tool. Serve immediately.
