Ingredients

  • Syrup:
  • 3 C. strawberries, sliced
  • 1/4 C. sugar
  • 1/2 tsp. lemon zest, divided
  • Toast:
  • 2 eggs
  • 1 C. fat free milk
  • 1/2 tsp.vanilla extract
  • 4 oz. low-fat cream cheese
  • 1/4 C. fat-free ricotta
  • 2 tsp. granulated sugar
  • 12 slices wheat bread
  • 1 C. strawberries, sliced
  • 2 tsp. butter
  • 2 Tbs. canola oil

  1. To make syrup: combine the strawberries, sugar, 1/4 teaspoon of the lemon zest, and lemon juice.

  2. Bring to a boil; reduce the heat and simmer, stirring occasionally, until the syrup is thickened 12 to 15 minutes.

  3. Set aside and let cool before serving.

  4. To make the French toast: Whisk together the eggs, milk, and vanilla.

  5. In a small bowl, combine the cream cheese, ricotta, sugar, and remaining 1/4 teaspoon lemon zest.

  6. Spread on 6 bread slices and top with the strawberries.

  7. Top with the remaining bread slices.

  8. Melt the butter in the oil on a griddle.

  9. Dip the sandwiches in the egg mixture.

  10. Cook until golden brown, 2 minutes per side

  11. Serve with the syrup.
