  • 2 C. graham cracker crumbs
  • 1/3 C. butter, melted
  • 8 oz. cream cheese
  • 5 Tbs. Stevia, aspartame or Sucralose
  • 2 Tbs. vanilla extract
  • 2 Tbs. lemon juice
  • 4 C. Sugar-free Cool Whip or other whipped topping, sugar-free
  • 1/2 C. Sugar-free caramel topping or sauce

Combine graham cracker crumbs with melted butter in a bowl and stir to combine
Press mixture into an 8x8 square pan
Into a bowl add the cream cheese
Allow it to soften for easier mixing
To the cream cheese add the sweetener, vanilla, lemon juice and stir to combine
Fold in the whipped topping
Pour mixture on top of the graham cracker crust in the 8x8 pan
Drizzle the sugar-free caramel onto the cheesecake
Chill for 3 hours and then cut into bars before serving
