These Diabetic No-Bake Cherry Bars are great for a bit of sweetness if you have diabetes, but they are also handy for those trying to avoid sugar in general. There's no reason to deprive yourself when you can easily make up a batch of these delicious bars. Since they are no-bake, you don't even have to heat up the house on a hot summer day. All you need are a few basic ingredients.

  • 1 1/4 C. whole wheat bread crumbs
  • 1/4 C. butter, melted
  • 1 C. + 1 Tbs. splenda
  • 8 oz. cream cheese, room temperature
  • 1/2 tsp. vanilla extract
  • 1 C. whipping cream, chilled
  • 1 can sugar free cherry pie filling

Mix the crumbs with one Tbs. of Splenda
Stir in the butter and press the mixture into an 8x8 baking pan
Chill for 1 hour or longer
Beat the whipping cream until fluffy
In a large bowl, mix the cream cheese, vanilla and remaining Splenda
Mix well
Gently fold the whipped cream into the cream cheese and smooth over the crust in the pan
Pour the cherry pie filling over the dessert and cover with waxed paper
Freeze for 30 minutes, cut into squares and freeze completely
To serve, remove from the freezer 30 minutes before serving
