There is no sugar and it's full of healthy ingredients, so the treat will satisfy your cravings. The added touch of coconut will create a twist on the traditional idea of lemon bars, but it will give it a gourmet feel.

Ingredients

  • Base:
  • 1/3 C. almond flour
  • 1/2 C. oats
  • 1/2 C. raw buckwheat
  • 3/4 C. dates, pitted
  • 3/4 C. coconut flakes
  • 2 Tbs. light agave nectar
  • lemon zest from one lemon
  • Top:
  • 1/4 C. coconut oil
  • 3 Tbs. maple syrup or honey
  • 1/2 lemon juice from the lemon

Directions

To form base, grind all ingredients until blended
Line baking dish with parchment
Press dough on bottom of pan
Set aside
To create top layer on stove, combine and heat coconut oil with maple syrup until melted
Remove from heat
Cool to room temperature
Add lemon juice
Whisk ingredients
Pour over base
Refrigerate 3+ hours. For faster setting time, place in freezer for one hour
Cut into squares. Top with extra lemon zest
Serve
