The sweetness of the bars comes entirely from the pineapple chunks, so there is no refined or white sugar being used. These treats might be a healthy dessert, but you won't be able to tell.   • 3/4 C. pineapple chunk, drained
  • 1/4 C. orange extract
  • 1 Tbs. vegetable oil
  • 1 1/2 C. flour
  • 1/2 C. pineapple juice, unsweetened
  • 1 1/2 C. flour
  • 1 large egg

Place 1/4 cup of the pineapple chunks in a food processor and blend until smooth
Transfer the purée in a large bowl
Add in the orange extract, pineapple juice, egg and the oil and stir well
Then get a stand mixer and transfer the mixture on the mixer container and mix the ingredients at a low speed
Remove the purée from the mixer and add the remaining pineapple chunks into the purée and blend for 1-2 mins until smooth
Use a spatula to stir the mixture
Prepare a baking pan with a parchment paper and place the purée on the paper and refrigerate for 2-3 hours
