Diet Lasagna with Cabbage

This is really good and less fattening than regular lasagna with the noodles.

  • 4 C. tomato juice, boiled down to 2 C. or use 2 8 oz. cans tomato sauce
  • 1/2 large head cabbage
  • 1 lb. ground beef
  • 2 Tbs. onion flakes
  • 1 tsp. oregano
  • 1 tsp. parsley
  • Garlic powder to taste
  • Salt and pepper to taste
  • 1 can mushrooms
  • 6 oz. cottage cheese
  • 1 egg
  • 3 oz. mozzarella cheese, cut in strips

Cut the 1/2 head of cabbage in half, and then chop each section into thirds. Boil cabbage until tender. Saute meat with onion. Add oregano, parsley, garlic powder, salt, pepper and mushrooms. Blend cottage cheese and egg in blender until smooth. Alternate layers of meat, mozzarella, cabbage leaves and cottage cheese mixture. Bake at 350 degreesĀ for 35 minutes. Let sit 10 minutes before serving.
