Diet Strawberry Pie

This recipe is good for those on a diet or for those with diabetes. It lets you have dessert without feeling deprived or guilty. This recipe is also easily adapted by using any gelatin that you can match with yogurt. We like the lemon and orange flavors but the strawberry is our favorite.

  • 1 fat-free graham cracker crust
  • 2 3-oz. boxes of strawberry gelatin
  • 1/4 C. hot water
  • 2 4-oz. containers strawberry yogurt
  • 1/2 C. crushed strawberries
  • 1 8-oz. container fat free frozen whipped topping
  • sliced strawberries to top with (optional)

Open pie crust and have it ready for filling. Place gelatin in a large bowl and whisk in 1/4 C. hot water until gelatin has dissolved. Quickly whisk in one yogurt container, mixing well. Add second yogurt and crushed strawberries. Fold in whipped topping. Pour into pie shell and refrigerate at least one hour or place in freezer for about 20 minutes. Top with sliced strawberries before serving.
