  • 1 lb. ground beef
  • 2 C. ground raw Irish potatoes
  • 1 C. grated carrot
  • 1 large onion, ground
  • 1 egg
  • Tomato juice

Salt and pepper to taste. Mix all ingredients and place in casserole, pour over top enough tomato juice to just moisten.  Bake in a 250 degree oven for 1 hour and 15 minutes adding more tomato juice if necessary to keep moist.
