  • 4 1 1/2 inch thick sirloin steaks
  • 2 Tbs. Dijon mustard
  • 2 cloves garlic, minced
  • pinch salt and pepper
  • 1/4 C. panko breadcrumbs
  • 1/4 C. herbes de Provence

Preheat the oven to 350 degrees and heat the olive oil in a large skillet over medium-high heat. Season room temperature steaks with salt and pepper, and sear on each side until browned and caramelized. Mix remaining ingredients in a small bowl and gently press onto the tops of the seared steaks. Bake for 30-40 minutes for medium-rare doneness. Adjust cooking times for better doneness. Slice and serve.
