Dill Maple Glazed Carrots

This is a simple way to incorporate the vitamins of carrots and satisfy your sweet tooth. Perfect low-carb pairing for any protein dish.

  • 1 16-oz. bag baby carrots
  • 2 Tbs. butter or margarine
  • 3 Tbs. maple syrup
  • 2 qts. boiling water
  • 1 tsp. dill weed
  • salt and pepper to taste

Boil carrots in 2 qts. of boiling water for about 15-20 minutes, or until carrots can be inserted easily with a fork. Next add the remaining ingredients and simmer on low for about 10 minutes, until carrots have a shimmer to them.
