Divine Chicken Caesar Salad

- 1 egg
- 2 boneless, skinless chicken breasts
- 2 Tbs. olive oil
- 1 bag or 4 C. romaine lettuce
- 4 strips bacon
- ¼ C. Caesar dressing
- 1 lemon
- 2 Tbs. parmesan cheese, grated
Place egg in a small saucepan. Pour 1 inch of cold water over. Gradually bring to a boil over medium heat. Once at a boil, remove from stove and let sit for 10-12 minutes. Run under cold water once cooked for 30 seconds.
In a skillet, heat bacon over medium-low heat. Cook for 8-10 minutes, flipping occasionally. Once crispy, drain and remove from heat. Clean off skillet and place back on stove. Heat olive oil over medium-high heat. Once heated add chicken breasts. Cook for 6-8 minutes per side or until chicken reaches an internal temperature of 170 degrees. Remove from heat and cut into slices.
Divide the romaine lettuce into 2 bowls or plates. Top with egg, bacon, chicken and Caesar dressing. Squeeze a fresh lemon over each. Sprinkle with parmesan cheese and serve.
