Divine Meatless Meatloaf Recipe

Stays firm when cold, so it is very good for meatloaf sandwiches.

Ingredients

  • 2 raw white potatoes
  • 1 C. chopped onions
  • 1 C. dry bread crumbs or wheat germ
  • 1 C. pecans (or walnuts or sunflower seeds)
  • 2 well-beaten eggs
  • 1 tsp. salt, unless you added tamari
  • black pepper
  • basil or any other favorite "meat loaf" spices, like mustard.

Directions

Preheat oven to 350 degrees. Put potatoes, onions, nuts, and bread through a food processor until all ground up, like meat loaf. Mix these ingredients well, then add the rest of the ingredients. Put in well-greased loaf pan and bake until 1 hour or until firm.

  • I love the idea of meatless meatloaf but this is so very bland. I think I will use flavored breadcrumbs next time or add green pepper and onion.

  • Something must be missing from this recipe. With the ingredients listed, I don't see how there would be enough to even filll the bottom inch of a loaf pan.
    Also what is tamari? or are there letters missing. or is it a kind of black pepper? Like to try it but afraid it's missing something.
