  • ½ C. white sugar
  • ½ C. lemon juice
  • 2 tsp. onion, diced
  • 1 tsp. Dijon mustard
  • ½ tsp. salt
  • 1 C. cashews
  • ¼ C. dried cranberries
  • 1 apple, peeled and sliced
  • 2/3 C. vegetable oil
  • 1 T. poppy seeds
  • 1 head of romaine lettuce, chopped
  • 4 oz. Swiss cheese, shredded
  • 1 pear, peeled and sliced

In a food processor, add in the sugar, lemon juice, onion, mustard and salt. Add in the oil while the food processor is on. Add in the poppy seeds. Continue to mix until the mixture is thick. In a large bowl add in the romaine lettuce, Swiss cheese, cashews, dried cranberries, sliced apples and pears. Toss the salad and pour the dressing over it.
