  • 2 C. pasta, cooked and drained
  • 2 T. olive oil
  • ½ C. mushrooms, sliced
  • 1 small onion, diced
  • 1 C. baby spinach, chopped
  • 1 C. Roma tomatoes, diced
  • ¼ C. flour
  • ½ stick butter
  • 3 C. heavy whipping cream
  • 1 C. Parmesan cheese, shredded
  • ½ C. Asiago cheese, shredded
  • 2 cloves garlic, minced
  • Salt and pepper to taste

In a large skillet, heat oil and sauté mushrooms, onion, and garlic until fragrant. Add in spinach and tomatoes, stirring while cooking. In a saucepan, melt butter and whisk in flour. Pour in cream, bring to a simmer, and add in Parmesan and Asiago. Whisk as mixture begins to thicken and season with salt, pepper, and extra garlic. Toss pasta with sauce and sautéed veggies.
