  • 2 T. olive oil
  • Seasoning to taste (salt, pepper, basil)

Preheat oven to 400 degrees F. Wash potatoes thoroughly and peel, if desired. Slice them into 1/4 inch wide fries. Place them in a large bowl and cover with cold water. Let soak for 30 minutes to remove starch. Drain, rinse, and lay to dry on paper towels. In a bowl, toss the fries with desired seasoning. Lay the fries out on a baking sheet without overlapping. Cook for 30 minutes, flipping at halfway point. Take fries out of the oven and raise temperature to 425 degrees F. Continue cooking until the fries are golden brown and crispy. Season again and serve warm.
