Double Chocolate Mint Dessert

Peppermint adds a tasty layer to this chocolate cake, drizzled with chocolate syrup.

  • 1 C. all-purpose flour
  • 1/2 C. butter or margarine
  • 1 1/2 C. chocolate syrup
  • 1 C. granulated sugar
  • 4 large eggs
  • Mint Layer:
  • 2 C. confectioners' sugar
  • 1 Tbs. water
  • 1/2 C. butter
  • 1/2 tsp. peppermint extract

Heat oven 350 degrees F.. Spray a 13x9 pan with cooking spray or coat with butter or margarine lightly. In a large bowl beat the flour, sugar, butter, eggs and syrup until smooth. Pour into the prepared pan. Bake 25-30 minutes or until it springs back when lightly touched. Cool completely. Beat together the mint layer ingredients until it is mixed well and creamy. When the cake is cooled, spread the mint cream on the cake. Chill. Serve in squares and drizzle each serving with chocolate syrup.
