  • 1 C. graham cracker crumbs
  • 1 C. sugar, divided
  • ½ stick butter, softened
  • 1 (8 oz.) package cream cheese
  • 1 C. powdered sugar
  • 2 tsp. vanilla extract
  • 1 C. heavy whipping cream
  • 1 C. strawberries, mashed
  • ¾ C. water
  • 3 T. cornstarch
  • 1 T. lemon juice
  • Dash salt

Combine graham cracker crumbs, ¼ cup of sugar, and butter until crumbly. Press into pie plate or cheesecake pan. In a large bowl, use an electric mixer to beat together cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whisk cream until thick. Fold into cream cheese mix and pour batter over crust. Refrigerate for at least 4 hours to set up. Prepare topping by bringing mashed strawberries and water to a boil in a saucepan. Remove pulp and combine juice with ¾ cup of sugar, cornstarch, lemon juice, and salt. Simmer and stir until thick. Remove from heat and toss with fresh sliced strawberries and blueberries.
