Thick stalks of asparagus have been pureed together with just a few ingredients into this smooth and creamy soup that will warm you down to your toes. If you're making this dish for a special occasion, we suggest serving with a garnish of asparagus tips and croutons.

  • 1 lb. Asparagus Stalks, trimmed and sliced
  • 1/2 C. Chopped Onion
  • 4 C. Vegetable Stock, divided
  • 1 C. Fat Free Half-and-Half
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 1 tsp. Lemon Juice

In a large saucepan over high heat, mix the asparagus together with the onion and 2 cups of vegetable stock. Bring mixture to a boil. Reduce heat to low, then cover and let simmer for about 5 minutes until asparagus is tender. Pour mixture into a food processor and puree until smooth. Return soup to saucepan and stir in the remaining stock, half-and-half, and, if needed, salt and pepper. Bring soup back to a simmer. Stir in lemon juice before serving.
